Most all holidays in Mississippi are celebrated with some type of sweet potato on the table. Most always, it’s sweet potato pie. But, Thanksgiving and Christmas are always the holidays that come to mind for homemade sweet potato pies. This scent is representative of the skinny red sweet potato, a flaky baked buttery crust, molasses, brown sugar, and caramel to sweeten, maple whipped cream on top and hints of soft spices. Personally, I don’t care for whipped cream on mine, but most people do. I have many recipes and uses for all types of sweet potatoes but, the simplicity of southern sweet potato pie is reminiscent of home. Southerners can make a food dish from just about anything and that's why we are country strong.
